Great-Grandma Wilkins' Recipe for Easy Icecream

This recipe has been handed down for four generation in our family. It is a very tried and true recipe. It requires no cooking, however, fresh eggs are a must. Makes one gallon.

2 large eggs
2 1/2 cup sugar
3 tablespoons vanilla
3 cups heavy whipping cream
enough whole milk to fill the churn (usually 1/2 gal.)

In a large mixing bowl, cream eggs and sugar together well. (The sugar will "cure" the eggs.) Then stir in vanilla and cream. Add part of the milk and stir. Pour mixture into an one gallon churn. Add additional milk as needed to fill churn to full line (usually one inch from the top of the churn). Freeze according to directions on the churn.

Other flavors and fruits may be added to taste before adding the milk.

If you want a lower calorie version of this, substitute for the cream and milk, half-half and skim milk.
