Ash's Chicken and Rice with a kick

Ingredients

2 tbps vegitable oil
6-8 Boneless skinless chicken thighs
3cups long grain rice (I prefer Uncle Bens)
3½ cups boiling water
1 chicken bouillon cube
½ red pepper
½ green pepper
small onion
3-5 cloves of garlic
1cup mushrooms (I prefer brown)
1 tomato
1-2 stalks of celery
1 cup Hot Salsa

Brown chicken on low in an extra large frying pan with oil. Meanwhile start washing and chopping the vegitables into small bite size pieces. Once the chicken is browned nicely remove it to a plate keeping the frying pan on the burner. If you haven't already, boil your water in a kettle or in another pan on the stove top and add the bouillon cube. Put rice into the frying pan cover with the boiled water and buillion cube, mix in chopped vegitables and turn on high. When the water has come to a second boil, re add the chicken cover the frying pan turn down low and simmer for 25 minutes remove from heat and let stand covered 10-15 minutes or until rice is tender.
serves 3-6

Note:
For a Milder recipe substitute hot salsa with medium or mild salsa. Add or remove any vegitables to preference.
