Orange Chocolate Cheescake

Ingredients:

(Base)
8 oz Chocolate Digestive Biscuits
4 oz melted Butter
1 tsp Granulated Sugar
1 pinch of Cinnamon

(Filling)
24 oz Cream Cheese
2 oz Caster Sugar
4 tbs frozen Orange Juice (thawed but no water added)
Very finely grated rind of 1 Orange
1 tbs Bailey's Irish Cream or Brandy
1 large bar (3-4 oz) Dark Chocolate (melted)

(Decoration)
Chocolate curls or grated Chocolate to decorate.


Method:

Crush the biscuits and mix with butter, granulated sugar and cinnamon.
Press this crumb mixture into a greased 8 inch cake tin (one with a loose base, if you have it).
Put in the fridge while you make the filling.

Beat the cheese, sugar, and orange rind until creamy.
Add the orange juice and Baileys.
Put the cheese mixture into the crumb crust.
Pour the melted chocolate over the top and swirl through the mixture.

Chill in the fridge and decorate just before serving.

Note:
The cheesecake tastes even better the following day (if there's any left!)
The variations are endless - Rum and Raisin, Cappuccino, Mocha...
