Irish Tea Brack

Ingredients

6 oz (¾ Cup) Tea
1 lb mixed Dried Fruit
6 oz Brown Sugar
1 Egg (beaten)
1 oz Butter (melted)
9 oz Flour
½ tsp Bread Soda
½ tsp Mixed Spice


Method:

Mix the tea, fruit and sugar and leave overnight.
Add the egg and melted butter.
Sift the dry ingredients together and add to the tea mixture.

Bake in a greased 8 inch cake tin or 2 lb loaf tin at 190°C for about 1½ hours.

Notes

  • I use hot tea but you can also use cold leftover tea.
  • Vary the flavour by trying different teas (eg Earl Grey).
  • The word brack comes from the Irish word breac , meaning speckled.
