Cherry Shortbread Biscuits

8 oz Butter
4 oz Caster Sugar
8 oz Flour
1tsp Baking Powder
2 oz Candied Cherries (washed, dried and chopped)
1 tsp Vanilla (optional)


Cream the butter and sugar.
Sift the flour and baking powder together and add to the creamed mixture.
Add the cherries (and vanilla, if using)
Mix the dough with a fork and then with your hands until it is smooth
Roll into a long sausage shape and chill in the fridge.
Cut into thin slices and place on greased baking sheets.

Bake at 190°C for about 10 minutes until golden.


  • You can add chopped, toasted hazelnuts or almonds if you like
