Marzipan

Ingredients :

8 oz Icing Sugar (sieved)
8 oz Caster Sugar
12 oz Ground Almonds
2 small Eggs (beaten)
1 tbs Brandy or Whiskey

Method :

Mix the dry ingredients together and stir in the brandy.
Add enough egg to give a firm paste.
Roll it out on a board dusted with icing sugar.

Notes :

  • This quantity is enough to cover a 9 inch round Christmas cake.
  • Form into shapes as a cake decoration e.g. use a little red food colouring and make marzipan "carrots" to decorate a carrot cake.
  • Cover Marzipan balls with melted dark chocolate.
  • Commercially made marzipan is convenient but tastes nothing like this!
