Spaghetti Carbonara

Ingredients :

12 oz Spaghetti
8 oz Bacon (cut into strips)
1 tbs Olive Oil
4 Eggs (beaten)
Salt
Pepper
2 oz Parmesan Cheese (freshly grated)

Method :

Boil the pasta while you prepare the sauce.
Fry the bacon in the oil and keep hot.
Add the pepper and salt to the eggs.
When the pasta is cooked,drain it.
Return it to the hot saucepan and add the cooked bacon and hot fat.
Quickly stir in the eggs and then the cheese.

Serve with extra grated Parmesan.

Notes :

  • This dish can be made with almost any type of pasta. Avoid very small or very thin varieties.
  • Use good quality Parmesan - you can really taste the difference.
  • The egg will still be slightly runny. If you are worried about "raw" egg just put it back briefly on the hot ring. It won't be "authentic" but it will still taste great.
  • This is a great impromptu super dish. You probably have most of the ingredients already and you can have it on the table in 20 minutes (or less!)
  • There are so many variations you can try - different herbs, spices, vegetables, smoked salmon ...
  • Substitute sauteed mushrooms for the bacon to give a tasty veggie version.
