Sunday Night Rice

Ingredients :

10 oz rice (raw weight)
Peanut Oil
1 Red Pepper (cut ino strips)
3 Spring Onions (chopped)
8 oz Mushrooms (sliced)
4 oz Peas (cooked)
4 oz Sausages (cooked and sliced)
1 Chicken Breast (cooked and sliced)
2 eggs (beaten)
Salt
Pepper
Soy Sauce

Sesame Oil to serve (optional)

Method :

Boil or steam the rice while you prepare the other ingredients. If you want to use leftover rice, you will need about 6 cups for 4 people.
Heat the oil in a wok.
Stir fry the pepper until almost tender. Then add the onions and mushrooms.
Stir in the peas, sausages and chicken and heat through.
Mix the eggs with salt and pepper and a dash of soy sauce.
Add to the wok and stir fry quickly.
Finally add the cooked, drained rice and mix well.

Serve with a little sesame oil if you wish.

Notes :

  • This is a good way to use up leftover meat, vegetables and rice.
  • The variations on this are endless. Use your imagination!
