Mayonnaise

Ingredients :

2 Egg yolks
½ tsp Mustard
1 tsp Salt
5 oz (¼ UK Pint) Olive Oil
5 oz (¼ UK Pint) Sunflower Oil
1 tbs Lemon Juice

Method :

Put the egg yolks, mustard and salt in a bowl and mix well with a balloon whisk.
Add the oil , drop by drop, beating all the time.
When the mixture thickens a little, you can add the oil a little faster.
When you have added a little over half the oil, and the mayonnaise is quite thick, add the lemon juice.
This will thin the mixture considerably.
Continue to add the oil, mixing well.
When all the oil is added taste the mayonnaise and add more salt or lemon to taste.
Add more oil if the mixture is too thin.

Notes :

  • Use all olive oil for a heavier mayonnaise. Using part walnut oil makes a wonderful mayonnaise for a Waldorf Salad.
  • Substitute white wine vinegar or lime juice for the lemon juice, if you wish.
  • A crushed clove of garlic (or two) is also a good addition.
