Rum and Raisin Cheesecake

Ingredients:

(Base)
5 oz Digestive Biscuits (Crushed)
1 oz Ground Almonds
1 tbs Sugar
3 oz Butter (melted)

(Filling)
8 oz Cream Cheese
Grated rind of 1 Lemon
3 oz Sugar
3 tbs Rum
3 oz Raisins
2 Eggs

Method :

Mix the ingredients for the base together.
Press into an 8 inch tin and chill until firm.

Beat the cheese until creamy.
Add the lemon rind, sugar and rum and beat until smooth.
Beat in the eggs, a little at a time.
Stir in the raisins.
Put the mixture into the biscuit crust.
Microwave at full power for about 5 minutes.
Chill before serving.
