Custard

Ingredients:

8 oz Cream
2 oz Milk
3 Egg Yolks
1 tbs Caster Sugar
1 tsp Cornflour

Method:

Heat the cream and milk together in a saucepan.
Mix the egg yolks, sugar and cornflour in a bowl.
When the cream has just boiled add it to the egg mixture, stirring all the time.
Put everything back in the saucepan and heat very gently until thick.
(This will only take a minute or so.)

Notes:

  • This is easier to make than custard mix and tastes incomparably better.
  • Traditional custard usually contains vanilla and a little more sugar. It doesn't really need them - add them if you feel you must!
