Half-and-Half Soda Bread

Ingredients :

8 oz Wholemeal Flour
8 oz Plain (white) Flour
1 tsp Baking Soda
3 tsp Baking Powder
1 tsp of Salt
1 Egg
10 oz Buttermilk

Method :

Sift the flour, baking soda, baking powder and salt into a bowl.
Beat the egg and milk together.
Add the milk mixture to the dry ingredients and mix to a smooth dough with your hands.
Place on a floured board, knead lightly and roll into a round shape.
Place on a greased baking sheet and cut a deep cross in the centre.
Bake at 200° C for about 40 minutes.

Notes:

  • If you do not have buttermilk you can use sour milk or fresh milk soured with a little lemon juice or vinegar.
  • The bread should sound hollow when tapped. If the bottom seems under-done, turn it upside-down and bake for a few more minutes.
  • Wrap the freshly cooked bread in a clean tea towel as it cools. This helps to keep the crust soft.
