Scone Bread

Ingredients :

1 lb Plain (white) Flour
3 tsp Baking Powder
1 tsp of Salt
10 - 12 oz Milk
A little beaten Egg

Method :

Sift the flour, baking powder and salt into a bowl.
Add the milk and mix to a smooth dough with your hands.
Place on a floured board, knead lightly and roll into a round shape.
Place on a greased baking sheet and cut a deep cross in the centre.
Brush with beaten egg (or milk)
Bake at 200° C for about 40 minutes.

Notes:

  • For a tea bread children will love, add an ounce of sugar, a pinch of spice and a handful of raisins.
  • Replace up to half the white flour with wholemeal flour.
  • The bread should sound hollow when tapped. If the bottom seems under-done, turn it upside-down and bake for a few more minutes.
  • Wrap the freshly cooked bread in a clean tea towel as it cools. This helps to keep the crust soft.
