Yoghurt Cheese

Ingredients :

Unflavoured Yoghurt
Salt

Method :
Stir the salt into the yoghurt - for each pint you will need about a teaspoon of salt.
Put into a muslin or cheesecloth bag or place in a strainer lined with muslin and leave to drain overnight.

You can use the yoghurt cheese as you would use cream cheese -in salads, snacks, sandwiches, on scones etc.
It is delicous mixed with fresh herbs, crushed garlic or paprika.
Try it with honey, cinnamon and banana too !
