Roast Potatoes

The best way to roast potatoes is to cook them in the roasting tin beside a joint of meat or poultry.

To prepare the potatoes:
Peel the potatoes and cut into halves (or quarters if the potatoes are large).
Parboil in boiling water for about 10 mins.
Drain well and scratch the surface of the potatoes all over with a fork.

Make sure the fat in the roasting tin is really hot.
Add the potatoes and cook for about 45 minutes (basting frequently)until crunchy on the outside and soft in the centre.

A couple of cloves of garlic and some sprigs of rosemary added to the roasting tin will give the potatoes a wonderful flavour.
