Saucepan Cake

5 oz Butter
2 oz Golden Syrup
24 oz mixed Dried Fruit
5 fl oz Milk or cider
4 oz candied Cherries
2 Eggs (beaten)
12 oz Flour
1tsp Bicarbonate of Soda
1tsp grated Lemon Rind
2 tbs Sherry or Beer
1 tsp Mixed Spice


Gently heat the butter, golden syrup, dried fruit and cherries in a saucepan until boiling point is reached.
Simmer gently for 5 minutes, stirring occasionally.
When cool, add the other ingredients and mix well.

Bake in a greasesd, lined tin (8 inch round, or 7 inch square or 2 lb loaf tin) at 150°C for about 2 - 2½ hours.


  • Cake improves with keeping.
